Benihana's founder Hiroaki "Rocky" Aoki, beat his stacked odds by opening a Japanese restaurant in post-WWII America. WWII made Americans fear and resent Japanese culture. Aoki, at first, deliberately banned anything that seemed fishy or slimy, and focused on the main proteins of the American diet, chicken, steak, and shrimp.
