Betaflight 4.0 has two features for adjusting the power of your quad. Throttle scaling lets you turn down the throttle input. Motor scaling lets you turn down the motor output. This raises the question: could you run 6S batteries on high-kv 4S motors, and just turn down the power to make everything work right? Or maybe it would work even better?!
